The tour takes place in a property with its own gardens where food grows everywhere. The first part of the experience is to explore the area while your host explains the various plants you find and their importance in the kitchen. Here, youāll learn how to pick the right seasonal herbs, fruits, and vegetables for the meal.
The Trapiche: Costa Ricaās Sugar Cane Heritage
Youāll also get to visit a traditional trapiche. The trapiche is the oldest way in the country to process sugar cane. Often powered by oxen, the machine beats the cane to a pulp to extract the juice, which is later boiled and put into molds to cool down. Once cooled, it solidifies.
Costa Ricans call this minimally-processed sugar ādulceā (literally, āsweetnessā), but itās also known in many places as āpanela.ā This short visit will give you an understanding of the inner workings of traditional and historical farming in the area, as well as the importance of sugar cane in traditional drinks and dishes.
Preparing Drinks and Traditional Dishes
Next is the best part! Get ready to mix a tropical cocktail using one of Costa Ricaās most famous hard liquors, āguaro Cacique.ā Those who arenāt of drinking ageāor who prefer to avoid alcoholācan make their own fresh fruit juice.
Squeeze into the kitchen, family-style, and follow your instructor as you learn to craft some of the countryās favorite dishes, such as handmade tortillas, refried beans, or patacones.
